Ru's Asian Pork Pierogi

A mouthwatering fusion of flavors, Ru's Pulled Pork Pierogi are sautéed and plated over citrus Asian slaw and garnished with pineapple BBQ sauce, sesame seeds and chives.

  • Chives5 oz
  • Rice Vinegar5 cups
  • Lime Juice5 cups
  • Extra Virgin Olive Oil2½ cups
  • Sugar1¼ cups
  • Kosher Salt¼ cup
  • Napa Cabbage6 lbs
  • Red Chillies½ lb
  • Carrots½ lb
  • Red Bell Peppers½ lb
  • Green Onion4 oz
  • Fresh Mint8 oz
  • Ginger Root¼ lb
  • Ketchup14 cups (#10 can)
  • White Vinegar3 cups
  • Worchestershire Sauce1 cup
  • Molasses¼ cup
  • Honey¼ cup
  • Pineapple Juice5½ oz
  • Salt, Pepper, Garlic Powder To Taste
  • Citrus Asian Slaw Instructions
    • Finely slice cabbage, chillies, carrots, peppers and mint. Finely dice or grate ginger. Combine in a bowl and toss.
    • Whisk together vinegar, lime juice, olive oil, sugar and salt, forming a dressing.
    • Add 2-3 cups of dressing to vegetables, depending on your preference.
    • You’ll have extra dressing left over to make this recipe again, or to use on your summer salads!
  • Pineapple BBQ Sauce Instructions
    • Combine all ingredients and whisk until blended.
  • Plating
    • Arrange slaw on plates.
    • Place sautéed Pulled Pork Pierogi on top of slaw.
    • Drizzle with pineapple BBQ sauce and garnish with sesame seeds and chopped chives.
